Mosto d'uva or Saba is a reduction of Carignano, young red wine, boiled for hours to evaporate. It is a very interesting accompaniment to blue cheeses. Pinella the producer is the fifth generation of a family whom have been making this traditional recipe near Oristano in the centre part of Sardinia.
