Mullet Bottarga, the Mediterranean caviar! A Sardinian delicacy. Our producer is one of the only on the island still using the ancient methods to salt, press and air dry the bottarga, an ancient method brought over by the Egyptians 3000 years ago. Grated over spaghetti is still our favourite way to use it.
