Twice toasted for flavour, Fregola Sarda is actually a pasta, despite its couscous like appearance. Originating from Arabic influences, it is a traditional staple in Sardinia, usually used in recipes with a clam and parsley broth. However, it has become very popular in modern British cuisine as it is so versatile as well as in Italy, where it is produced in Sardinia by two brothers carrying on their traditional family business.
