This semi-hard cheese from North Eastern Italy is made using milk from cows which graze on sweet summer meadows at high altitude. This gives the cheese an incredibly sweet and nutty flavour, and gives it a very strong flavour reminiscent of a much harder, more mature cheese but with a much springier and creamier consistency.
