Produced by two sisters in the northern state of Lombardy, the shape of this classic cheese is inspired by ancient stone shelters that used to litter the Italian landscape. Aged for a minimum of 6 months, this cheese has a dual texture - white and chalky in the middle, and ripe and creamy towards the rind. Made from cows milk, this cheese would make a classic addition to any 'tagliere di formaggi'!
